SUMMER PRODUCTION - PRODUZIONE ESTIVO




Production 2011 summer veggies....trombette(zucchini ligure lunghe dolce e buone) cut really thing and boiled in vinegar, white wine and kosher salt(5 tablespoons)with garlic(leave on the skin) for 2 minutes after it gets back the rolling boil....then dump into collander, give it a shake to take out the extra liquid and then put on a linen kitchen towel to dry for abut 24 hours. Then pour into a big bowl and add enough oil to separate all the thin slices. At this point all you have to do is jar it....peel and slice garlic and put it into the zucchini between the layers of sliced veggie. Cover with oil - tap lightly on bottom of jar to settle veggies and then pass a knife around the edges pressing towards the center to get the air bubbles out. Make sure oil is above veggies and cap jar. Put in a dark and cool place where you will then check it for the first few days giving the jar a little tap on its bottom to be sure there no air has remained between slices. Top up oil if necessary.

The red in the jars on the left are home grown, homemade SUN DRIED tomatoes...Was a long process this year because the humidity was high. Only hope that they don't go bad on us while aging in the oil. When the tomatoes are dried in the sun they then must have a white wine dash or two of vinegar bath which takes away the extra salt. Boil the liquid and then dunk the veggies into the boiling liquid. Stir them around and turn them over several times in the liquid, about 2 minutes. DON'T forget to boil about 6 cloves of garlic with skin while doing tomatoe thingy.Dump into collander then place on drying racks leaving space between each tomatoe...also dry out the garlic. Jar them and do the same as above for zucchini....the results should be tasty and perfect for appetizers around XMAS.

PS: garlic gets the boil because it kills any possibility of moulds forming...I'm still working on the question of whether you should sterilize veggies in oil. There are several opinions: One of which is mine: if you boil olive oil you ruin the vitamins in it. If you don't sterilize you could get deadly germs in the jars. If you don't hear from me around January send roses!


La produzione estiva di verdure sott'olio sta andando a gonfio vele. Tanto gonfio che direi ho finito per quest'anno. Il vasone di trombette sott'olio è mio unico lavoro di questo tipo perche lo faccio esclusivamente sul insistenza del marito che le adora. Solito processo per sott'oli...aceto e vino bianco in equali quantità con una bella manciatina di sale grosso. Bollire liquidi, mettete dentro i zucchini tagliato finissimi insieme a 5 spicchi aglio vestiti...al ribollire del liquido proprio 2 minuti e poi colare. Dopo di che si mettono su un strofinaccio per 24 ore di asciugatura. Poi mettere zucchini in una ciotola e aggiungere solo abbastanza olio per separare le fettine. A questo punto invasare intercalando aglio tra strati di zucchini. Volendo potete aggiungere pepe nero in grani. Con un coltello levare bollicini aria tra i strati, chiudere vaso assicurando che olio copre bene le verdure. Mettere poi in posto fresco e asciutto dove però dovete scendere o arrivare ogni giorno per dare due patpat sul sedere del vaso per levare eventuali bolli aria rimasti e assicurare che olio è sempre sopra livello verdure. Sono pronti verso Dicembre.

I vasi con verdure rosse dentro sono pomodori seccati al sole. Quest'anno un impresa non indifferente anche se di sole c'era tanto. Umidità giornaliera era altissima compromettendo l'asciugatura. Una volta pronti bollire in vino bianco nella quale avete messo due bei spruzzi di aceto. Al ribollire del liquido con pomodori dentro dovete girare bene i pomodori dentro il liquido levando così il sale in eccesso. A questo punto colare in colapasta e poi togliere i pomodori uno per uno mettendoli su una graticola dove li farete asciugare al ombra per 24 ore. NON DIMENTICARE di fare bollire anche 5 o 6 spicchi di aglio vestiti(questo per scongiurare eventuale formazione muffe sul aglio). A questo punto basta mettere pomodori e aglio svestito e tagliato a fettine grosse dentro vasi che coprirete di olio seguendo stesso metodo dei zucchini....

PS: ce il problema della sterilizzazione vasi con olio oliva...faccio non faccio? Bollendo olio si rovina organolettico del olio...non bollendo si rischia bottulino....boh?
