PESTO MANIA

There seems to be an enduring mania which has flooded American kitchens, cooks and connoiseur....PESTO. As we in the boot-shaped peninsula know, PESTO is definitely a wonderful pasta sauce when used with linguine, thin string beans and potato strips. We also know that if you're really adventurous you can use it for salad dressing or for certain plops of something different on white cheeses like fresh ovine products. But the MANIA which has been going on in the STATES is really incredible - the other day I saw a recipe for BROCCOLI PESTO. If you think about it nothing is not PESTO-ABLE since the definition of PESTO in the boot-shaped peninsula's language is 'smashed' as in mortar and pestle. Even that is a big conundrum - mortar/pestle or robot? That's the ?.... anything you want PESTO-ED with anything you want as a spoon fork scoop....so while in ROME (or STATES) do as the ROMANS(AMERICANS)...PESTO it ALL...the results are scrumptious


PESTO MANIA arrivato negli States tanti anni fa dopo un incursione di qualche chefa nel BELPAESE che ha avuto il buonsenso 'mericano di esportare un ennesimo prodotto nostrano. Il nostranissimo ligurissimo PESTO LINGUINE FAGIOLINI-INI PATATA non bastava per la cultura culinaria 'mericana e voila' - altro giorno girando pagine delle tante reviste 'mericane culinaria che si trovano in casa del fratello Mainesco trovo BROCCOLI PESTO. OK! definizione PESTO lo sappiamo benissimo nella nostra bellalingua belpaesana...pestare! MA pestar-tutto indiscriminatamente? Troppo 'mericana? Vi sorprendereste sapere NO, assolutamente NO. PESTARE il PESTABILE da un non plus ultra a tutto cio' che potrebbe essere verdure, frutta secca tipo noci e co., frutta(oddio qui siamo nel difficile ma quanto volete scommettere che qualche CHEFA  non abbia inventato una salsina PESTOSO alle fragole?) E via PESTANDO affinche la questione esistenziale arriva fulminante -  fin dove vogliamo PESTARE?  Questo si' e' LA domanda fondamentale...PESTO, PESTI, PESTATE, PESTIAMO, PESTITE,PESTONO...la grammatica culinaria del mortaio e compagno cantando tirato su con quello che volete...e gia che ci siamo...una mia amica fa il pesto di PISTACCHI...e come dicono negli STATES...to die for...ossia mangiare e potete morire felice!
