Torta Cioccolato costruito - constructed choc-cake









Easter came and went and with it came and went yours truly to a location south of Ponente(West). At this point yours truly continues heading south of Ponente(West) but only once every other week so that there are no more excuses to not write posts in this blog. As if I would write posts in someone else's.

In any case Easter came here as it did everywhere, Sunday lunch included. I was asked to contribute a cake or something sweet and decided to bake a white chocolate sheet cake which if made in the right proportions usually ends up being the size of a, well, sheet cake. So I got out the ingredients, mixed and all those good things, put the cake into the pan and into the oven and got - well, a rather skimpy 1 inch high cake which really freaked me because I then had to do what I call culinary creativity and invent a cake which would serve - HELP 13 people. This is the result. I called it Constructed chocolate cake because that is exactly what it is...a constructed chocolate cake. The sheet cake is white chocolate. The center is Moscovado sugar brownie and the icing is chocolate frosting...ok so it's not dietetic.

White Chocolate cake:
and here the fun starts because I don't remember the recipe I used but I know that I only substituted the regular chocolate in a dark chocolate cake with white chocolate same quantity. And that is probably where the problems started but since it came out well trust me...just bake and cool then take out of the pan, cut in half and put one half on a cake platter. then make:

MOSCOVADO SUGAR BROWNIES:
1 stick of butter and 2 C. dark brown sugar(MOSCOVADO) in a pan and melt together(no, the sugar doesn't melt but the butter does and it becomes a kind of tar which then must cool to tepid in a large bowl...
Now in that add 2 eggs one at a time and beat well.
Then add 4 tbsp. cocoa and blend well.
Then add 1 C. flour and blend well.
Then add 1 C. chopped walnuts and blend well...
Put this mix into a rectangular cake pan which you have greased with butter and dusted with cocoa(that way the bottom of the brownie isn't white - cool idea). Bake at 350° in till done(my little gas stove takes about 45 minutes). Cool for a while on a rack and then take out of the pan.

Now the fun begins. Measure the size of the white chocolate cake bottom. Put an exact replica of brownie on top of the white chocolate cake bottom and then cover the brownie layer with the rest of the white chocolate cake. So far you've constructed the cake. Now the chocolate frosting:

SEMISWEET FROSTING

1 C. semisweet chocolate bits
1 C. sifted powdered sugar
4 tbsp soft butter
4 tbsp dark rum (or coffee)

Melt chocolate in microwave on lowest temperature. Add other ingredients and blend until smooth. Cool and spread on cake. I only make this amount then make more if I need it.

After having frosted the cake I then put white chocolate pieces on top....

TORTA CIOCCOLATO COSTRUITO -

Con Pasqua che era arrivata e partita ed io che giravo da Ponente a Sud per motivi di famiglia questo povero Blog è rimasta un po abbandonato a se stesso. Ogni settimana prendevo la FS è traslocavo per parecchi giorni nella città d'arte piu al sud per aiutare la figlia e poi tornavo fine settimana per continuare dove avevo lasciato casa a Ponente. Ormai a Sud si va una settimana sì e una no e ormai non ci sono piu scuse per non scrivere post nuove. Inizio con questa torta costruita che era richiesta per il pranzo di famiglia di Pasqua. 13 persone dovevano mangiare una torta fatto a 'lenzuolo' come si dice negli States solo che non avendo calcolato bene teglia ne impasto sono rimasta con una torta alta 2 cm lunga una quaresima che non poteva soddisfare nessuno e tanto meno i commensali pasquali. Così con un po di creatività culinaria ho detto tra me e yours truly...ma dai, oggi decostruiscono tutto in cucina perche non costruisco una torta. E questa è il risultato. Le foto iniziano dal impasto...ovvio.

TORTA CIOCCOLATO BIANCO
mica che mi ricordo che ricetta ho usato ma so solo che ho usato una normalissima torta di cioccolato scuro che ho sostituito con uguale quantità di cioccolato bianco. sicuramente i problemi erano iniziati qui...forse. Impastata e cotta questa torta ho poi tolto tagliata la torta a metà e messo prima metà come fondo della torta costruita su un vassoio poi ho fatto i brownies di zucchero moscovado:

BROWNIES DI MOSCOVADO
130grammi burro fuso in pentolino con 2 tazze moscovado(fondendo il burro con zucchero dentro diventa un impasto che va raffredato e poi messo in una ciotola grande)

nella quale metterete in questo ordine:
2 uova e poi sbattere bene impasto
4 cucchiai di cacao amaro e poi sbattere bene impasto
1 tazza farina e poi sbattere bene impasto
1 tazza noci tritati grossolanamente
questo impasto va messo in una teglia da torta rettangolare che avete precedentemente imburrata e cosparso di cacao amaro che non fa venire il fondo brownies bianco

cuocere in forno caldo 180° per almeno 45 minuti (se il vostro forno è a gas come la mia)

Tolto da forno raffredare in teglia per almeno 20 minuti poi levare dalla teglia su una gratticola.

Ora costruite il resto della torta prendendo misura del fondo e facendo un strato di brownies uguale che metterete sul fondo di cioccolato bianco. Sopra i brownies mettete altro strato di torta cioccolato bianco. Adesso dovete fare una glassa al cioccolato che coprirà la torta:

1 tazza gocce cioccolato fusi nel micro.onde.
1 tazza zucchero in polvere
4 cucchiai burro morbido
4 cucchiai rum scuro (o caffe o vaniglia)...i dosi sono soggettivi

sbattere tutto insieme e mettere sulla torta. Io faccio sempre questa quantità e se manca ne faccio ancora.

Sopra la torta finita ho messo pezzettini di cioccolato bianco.
