LASAGNE? - LASAGNE?

Let's just put it this way...I am not the mood to cook. Maybe because I've been 24/7 in the kitchen all summer with temperatures which literally make the Sahara look like it's air-conditioned. I've made 15kilograms (that's around 33 lbs) of various types of jams, chutneys and cousins. Which makes for a long summer if you include preparing around 15, 1/2kilo containers of eggplant parmigian, tons of beans already shucked and peppers galore already in the freezer keeping each other company along with the usual pound of pesto in tiny globs for easy use and the 10 or 12 packs of chopped skinned tomatoes...so as you can imagine this morning when I found myself kneading some flour with an egg and then preparing chard with onion in a saucepan and adding necessary ingredients for a LASAGNA?(for want of a better name I called it LASAGNA?) cus from a thing I remembered...if it walks like a duck and quacks like a duck....so here goes the recipe:

small can of stewed tomatoes drained

100 grams (1/2 cup more or less) bread flour MANITOBA
1 large egg
pinch of salt
knead together till smooth and then cover with a damp cloth so it doesn't dry out while you:

put into the cuisinart(or other handy mom helper) and chop medium fine
2 cups of chopped chard(use only the green part)
1 medium onion
put this into a small non stick pan into which you have put some olive oil (about 1 tbsp) and also 1 tbsp of water..cook slowly till the onion is transparent.
Put the chard into a medium sized bowl, add 1 egg and about a good handfull of grated parmaesan...mix together and if it seems to damp add a bit of bread crumbs...some salt and some pepper and voilààààà...

then you'll need:
some soft cheese like (stracchino - http://en.wikipedia.org/wiki/Stracchino) and who says is picture isn't worth a thousand words...how could I even describe what Stracchino is? say 2 cups...
and another egg...and some extra grated parmaesan

at this point it's simple...all you have to do is roll out the dough into two really nice strips about a palm wide and as long as they go...cut them into about 4 squares....and boil them gently in a frying pan with salted water in it (another thing I've learned about cooking which I'm beginning to not adore is there are a lot of really cool shortcuts - like using a frying pan to boil lasagne strips) when they rise to the surface they're done and all you have to do is transfer them to a dishtowel.

Construction of the lasagne:
cassarole with olive oil spread around on the bottom...add the drained stewed tomatoes and squish well with a fork
on this put a layer of noodles
on the noodles put a layer of the chard mixture(use half cus you will only have two layers with filling)
on the chard put about 6 globs of stracchino (about 1 full tsp each)
then noodles, then chard, then stracchino finishing the top layer with noodles....then

TATATATAAAAAA....on top of it all put about 1 cup of stracchino which you have whipped really well with 1 large egg and a small handful of parmaesan cheese which you have grated...it all then goes into the oven for about ??????? at 350° till the cheese layer on top gets really fluffy and golden...it's done, me too

and the hubby was really surprised and said 'in 40 years(so we've been together for only 37 but artistic license is allowed) you've never made LASAGNE?' obviously in his Italian mind the pasta dish I presented was definitely ?



L'uomo di casa è arrivata dalla campagna oggi e ha trovato una LASAGNA? Cosa rara se lo posso dire tutto perche considerando la mia mancante voglia di stare in cucina dopo un estate di 24/7 davanti ai fornelli cucinando confetture e compagni e poi lavorando lavorando con la roba da mettere nel congelatore dove si tengono compagnia fagioli, peperoni, pesto porzionato, parmigiana, sughi, pomodori pelati ecc. direi che una LASAGNA? anche con la ??, doppia per dire era un traguardo del tutto reguardevole. Mi ero trovato con le mani in pasta con solo 1 etto di farina e un uovo grande ma lo sapete che con quella quantita di farina e un uovo potete fare una LASAGNA?, si fa per dire, di dimensioni non indifferente e di 3 strati ben ingegnati.

così fate la pasta con 100 grammi di farina manitoba o se preferite con farina semola con 1 uovo grande
tiratela in due strisce larghe un palmo e lunghe quanto potete.
Questo poi lo tagliate in quadrati larghe un palmo(se è quadrato e già di un palmo...ma che scema)
e fateli bolllire in una padella(avete capito -PADELLA - scorciatoio per i non avendo voglia di cucinare) di acqua salata bollente...appena rifiorano in superficie farle uscire dal acqua e metterli su un canovaccio...

mentre voi fate l'impasto di 8 grandissime foglie di bietola - solo la parte verde e una cipolla media tutto tritata nel robot non tanto fine. Questo lo metterete in una padella antiaderente che avete unto con EVO e un pochino di acqua calda...questo sul gas affinche la cipolla è trasparente. Fuori dal gas lo mettete in una ciotola con un uovo, una bella manciata di parmigiana e se rimane troppo umida un pochino di pane grattata. Non dimenticate salare e pepare leggermente.

prima che dimentico ci vuole anche una tazza piena di pelati scolati dalla loro acqua

Poi ci vuole almeno 500 grammi di stracchino, 1 uovo grande e altro parmigiano grattugiato per fare questo che spiego sotto:

costruzione LASAGNA?
in una teglia non tanto grande mettete un po di EVO e sopra questo mettete i pelati scolati che poi schiacciate bene con una forchetta.ù
primo strato di pasta
sopra la pasta mettete un po del impasto bietole(usate metà perche farete due strati di pieno)
sulle bietole mettete sparsi in giro 6 cucchiaini colmi di stracchino
sopra questo mettete altro strato di pasta, poi bietole poi stracchino.....finendo coperta di pasta

e poi prendete almeno 300 grammi dello stracchino e sbattere bene con un uovo e una manciatina di parmigiana che spalmerete sul ultimo strato di pasta

il tutto nel forno a 180° per il tempo che ci vuole che la LASAGNA? diventa golden e lo strato di formaggio non diventa gonfia....

e l'uomo arrivando dalla campagna sedendosi a tavola e vedendo sto coso gonfio e golden disse molto sorpreso 'sono 40 anni (veramente solo 37 ma lasciamo perdere) e non hai mai fatto LASAGNE?' E con grande appetito mangiò metà delle LASAGNE? alla faccia del italiano in lui che diceva 'mia madre non le faceva così le LASAGNE'
