BERGER cookies idem italiano

This is the link for those wonderfully fudgy filled sponge cake cookies which we used to buy at the Farmer's market in Baltimore. As you can see these are NOT those wonderfully fudgy sponge cake cookies from Baltimore. They're a simply wonderful fudgy imitation of those cookies which I recently gave as a gift to my favorite Veterinarian who, unfortunately, has moved to another city to work. She saved the beaglecuda from kidney failure caused by the Leishmaniosis disease...pretty awful protozoan illness caused by flebotomi(biting gnats). In any case, I fattened her up with several kinds of wonderful sweets and this is only the last of the series....lady finger cookies(spongy type - not thick) filled with a your-choice chopped nut fudge made from scratch(used the condensed milk variety which you can find here: http://www.cookingforengineers.com/recipe/98/Condensed-Milk-Fudge
which I layered on one cookie then covered with the other and squished being careful not to crack the cookies....then I just dipped them in melted dark chocolate...and let them dry on a tray covered with parchment paper....they were superb! Not BERGERs but the closest I could find in this end of the boot-shaped peninsula!


Il link sopra presenta uno tipo di biscotto americano che io ADORO - BERGER cookies. Erano il mio preferito anche da bambina quando andavo con la sorella di mia madre nel farmer's market a Baltimora dove si compravano alla dozzina...questi nella foto sono una buona imitazione che ho fatto per la mia VETERINARIA preferita che ormai, da Venerdì scorso, non lavora più nello studio dove porto la beaglcuda. E' lei che ha salvato la nostra Cleo dalle leishmaniosi che le stavano facendo andare in blocco renale. E così per farla capire quanto ero felice ho deciso di metterla ad ingrasso- questi biscotti erano solo gli ultimi di una serie di cose fatte per lei e lo studio di medici.
I biscotti sono niente altro che pavesini con dentro un strato di fudge con noci trittati più un altro pavesino sopra che viene schiacciato delicatamente  sopra così di non romperne...i biscotti assemblate poi vanno pucciate in cioccolato fondente fuso, lasciati asciugare su carta forno messa su una teglia da biscotti grande. Erano superbe anche se un imitazione degli originali...
