In Italy the mimosa with its beautiful allergy causing flowers is the top of the line gift for women on Woman's Day...sneezing apart it is a lvoely fluffy yellow puff ball of a flower...but it cannot compete with my husband's gift....this magnificent ORCHID!

La mimosa quest'anno durante Siberia a ponente ha avuto grossi problemi di geloni. Probabilmente perche era fiorita a Gennaio. Siberia arrivata durante Febbraio e voilà.BRRRRRR! E così a parte il fatto che sono allergica al odore della mimosa. E da buon intenditore il mio metà sa che adoro e colleziono orchideeeeeee......guarda cosa ha portato a casa ieri!

lady fingers - lingue di gatto

In the boot shaped peninsula these wonderful sweets are called cat's tongues...of course they are supposed to be shaped like little feline tongues but I'm never one to stick with formalities. This recipe was happily plagerised fromt the back of a rice flour bag. The principle ingredient of the recipe is rice flour. Discovered this wonderful flour during lunches and cooking class with a friend who has coeliac disease -for those of you who aren't familiar with it...glutine intollerance is another name :
the sweets are wonderfully sponge cakey and when filled with raspberry jam they are just the cat's meow! PS: the bits and pieces are obviously the baker's taste...

LADY FINGERS

100 grams rice flour
100 grams soft butter
100 grams (use less cus this amount makes them really sweet)
4 egg whites beaten stiff
1 teaspoon vanilla extract....

beat butter till fluffy and add all the ingredients except the whites...when the butter mixture is smooth and creamy fold in the whites until well incorporated. DO NOT mix, FOLD in otherwise the mixture loses its air pockets and will become a brick....put the mixture into a pastry bag and squirt it onto a cookie sheet which you have previously lined with parchment paper. Bake until golden at 350°...cool on rack. Use the parchment to pull whole thing out of pan so that it cools on rack without forming humidity underneath. Once barely tepid cut exactly in half and place one half on a clean cutting board. Spread your favorite jam on the half which is on the board and cover with the other half.Using a serated knife cut into squares and place on serving tray. Use a fine mesh sieve to sprinkle powdered sugar (4X) on the cut squares. If you really want to make lady fingers just use the pastry bag to make lots of fingers on the parchment covered baking sheet. Attention baking time....fingers burn quicker than squares....brilliant statement!






Negli Stati Uniti lingue di gatto sono chiamate dite di donne..gioca quelle nel lotto...Non stando mai alle forme originale di ricette ho deciso di fare questa ricetta in modo un po più cialtrona, per rubare una parola che adoro da un amica o due che la usano. Farina di riso, un conoscente da non tanti anni, fa parte maggiore nella ricetta. In fatti la ricetta viene direttamente dal sacco della farina...una nostra amica celiaca ha fatto una lezione di cucina no glutine nella quale ho imparato parecchie cose sia sulla malattia che sulle farine permesse e non. Un link caso mai volete saperne di più.

comunque le tortine erano molto buone. Gusto tipo pan di spagna leggera con un bel strato rossissimo di confettura lamponi con tanti semini...

LINGUE DI GATTO:

100 grammi di farina di riso
100 grammi di burro morbido
100 grammi di zucchero a velo(direi di usare meno perche questa quantità rende molto dolce)
1 cucchiaino estratto vaniglia
4 albumi sbattuti a neve

mescolare a crema voluminosa burro e poi aggiungere tutti gli ingredienti escluso gli albumi. Finito di amalgamare ingredienti mettere dentro gli albumi con molto attenzione a non sgonfiarli. Una volta finito impasto prendete una teglia da forno e foderare con carta da forno. Prendere un sacco a poche e mettere dentro impasto che va messo a strisce una attaccata al altra affinche la teglia è riempita da parte a parte. Infornare a 180° affinche golden. A questo punto togliete la teglia e usando la carta forno a mo di maniglie mettete la torta su una graticola dove la farete raffreddare affinche tiepida. Tagliare a metà e mettete questa su un tagliere pulito. Spalmare sopra confettura a piacere...mettete l'altra metà, schiacciare delicatamente che si incolla bene sulla confettura la parte sopra. Poi tagliare a strisce o quadretti a piacere. Mettete questi su un vasoio o piatto di portata e spolverare con zucchero a velo...i pezzetti nella foto di sopra erano la prova del assaggio per la pasticciera MOI

Also grew up with all the wonderful musicals on Broadway - Peter Pan anyone..or Oklahoma...or The King and I...nothing wrong with all that for sure. But I don't know how I or my siblings or my cousins or anyone could have ever grown up without DR SEUSS.....so HAPPY BIRTHDAY sir...Christmas was just not complete, even after Dickens, without the Grinch!

Cresciuta anche con tutti i musicals di Broadway - Peter Pan qualcuno? o magari Oklahoma...o magari The King and I...nulla da eccepire sicuramente. Ma non so come io ne miei fratelli ne miei cugini ne nessuno poteva mai essere cresciuto senza DR SEUSS...così BUON COMPLEANNO signore...Natale non sarebbe mai completo, anche dopo Dickens, senza il GRINCH!

Il biscotto più amata e adorata da yours truly oggi fa il suo 100esimo compleanno. Per festeggiare hanno deciso di fare una scatola festosa e anche dei biscotti particolare...guardate il link. Unico problema è che per Maggio magari non ce ne saranno più ed io non potrei godermi una pera di Happy Birthday Oreo. BOOOHOOO!

Quick cake (translation - scroll down) - TORTA FACILE

Ci sono giornate, diciamo anche serate che devo riparare una torta di corsa.

Non che era una torta spettacolare ma una cosetta da portare da amici quando era ora di cena. Si cenava alle 19:30. Erano le 15 e avevo un po di premura. Direi! Così ho fatto questo:

devi avere a portata di mano almeno 4 fette di plumcake(io avevo mela e cannella) che tostate e sbricciolate. Aggiungete a questo 100 grammi di mandorle tritate grossolanamente. 15 minuti in forno caldo a 180°....fuori appena cotta e raffredata!

Adesso sulla 'crosta' fredda mettete piu o meno un strato da 1/2 cm di confettura rossa...avevo ciliegia. E VAI!

Ora mentre quello sta aspettando la crema - falla!

Sbattete insieme un uovo GROSSO con 1 cucchiaio colmo di zucchero, 1 cucchiaino di estratto vaniglia e 2 cucchiai non colmi di maizena(passate al settaccio) ASSICURATE di usare frustino a mano che non si formano grumi. DIFFICILE....e nel mentre fai questo (un po di multitasking gente) scaldate 125 grammi di panna fresca(l'avevo in frigo e mi sembrava che andasse bene)...aggiungete la panna al miscuglio e sbattete furiosamente quando la mettete sul fuoco perche diventa subito GRUMOLOSA...sbatti sbatti affinche cremosa e poi versare e spalmare sulla confettura.....

raffredare e vi garantisco una tortina di 'avanzi' non male....per farla diventare più bella potete mettere sopra un po di panna montata ma avevo premura ormai e poi non avevo mica tutta quella panna liquida in casa.......

tanto hanno sbaffato tutto e fatto pure complimenti.....

PS:

mini strato di CHEESECAKE se avete voglia di questa invece della cremina pasticcera

125 grammi philadelphia o tipo ESpin
1/4 tazza di zucchero semolato
1 cucchiaino di estratto vaniglia ;)
1 uovo
sbattete tutto vigorosamente e stendere sulla 'crosta' prima di metterla nel forno. Temperatura 180° per piu o meno 30 minuti...togliere dal forno e raffredare.....sopra la cheesecake su 'crosta' mettete un strato di confettura a piacere...pensavo che ananas zenzero sarebbe perfetto.... :)

I'm pretty sure that all of us have moments when we need to get a cake ready cus we're having dinner with friends and last minute you remember that desert was your part of that dinner. Hey, happens in the best of families. So this is what I did yesterday. Mind, at 4 in the afternoon and dinner was 7:30!

made a crumble crust out of 4 huge slices of poundcake with apples and cinnamon which I just happened to have...toasted and crumbled. Added about 1/2 cup of almonds (brown skinned) which I chopped up not too fine. Pushed that into a glass tin which I buttered. Threw that into the oven at 350°for about 15 minutes. Took out and cooled completely. Then on top of that I smoothed a layer of red jam...could have been any color but I had cherry. You could use mixed fruit or whatever you have on hand. At this point I made a really easy pastry cream:

1/2 cup whole cream heated to scalding
in another pot I beat 1 large egg, 1 teaspoon vanilla extract,1 rounded tbsp sugar, 2 flat tablespoons cornstarch which I sifted....beat it to death with a whisk cus it gets lumpy and when that was beaten really smooth I added the scalded cream beating continuosly. Put on fire long enough to get a pastry cream which was smooth. Poured this on top of the cooled crust with jam layer...smoothed the cream on top. FINISHED cake in no time at all. They also ate the cake in no time at all...said it was really good too.

for adventurous palates....creamcheese layer instead of pastry cream:

125 grams philly
1/4 cup sugar
1 teaspoon vanilla extract
1 large egg
whip all together and pour over uncooked crust(above)...bake 350° till cheese layer is solid...say 30 minutes? Cool and then add the layer of jelly...would be wonderful with pinapple and ginger!
