Sono quasi sicuro che le persone che hanno prenotato qui a PONENTE sono furiose perche estate, anche se formalmente iniziato il 21 Giugno, non è mica arrivata ancora. Stiamo sperando in un estate in ritardo - tardivo un po come le pere che non hanno voluto sapere di crescere nella stagione di Luglio che doveva essere estivo ma era piu una prova generale per autunno - diciamo Novembre. Come potete ben immaginare sono disperata perche non ho piu voglia di fare confetture e fortunatamente le pere hanno i vermetti. Loro sì che cooperano alle mie speranze di stare fuori dalla cucina ancora un paio di giorni. Nulla però mi terrà fuori dalla cucina la prossima settimana quando M comincia portare a casa tutta la verdura tipo peperoni enormi e melanzane e zucchini che dovrò trasformare in ZAKUSKA ligure(ricetta che metterò in seguito molto in seguito). E parlando di trasformazioni devo mutare 3 kg di confettura di fichi fiori neri in chutney perche onestamente quella confettura è talmente scura che sul burro sembra qualcosa di molto morta. Immagino che molto più cotta con tanto di spezie e varie vuol dire che ho fatto apposta scurirla in cottura per poter poi servirla con carni. PHEW! Meno male che ci siete che posso sfogare le mie ansie.... E poi diciamolo tutto. Se faccio il chutney posso sempre aspettare dopo il viaggio nel lontano ponente...sapete quel ponente dove sono nata e dove, come i rondini di quel posto tornano sempre....io torno là e NON mangio aragosta per i motivi che sapete oramai. Adesso si sono messi a dire che non sono kasher...a me basterebbe sapere che lo mangio io perche non lo sono kasher e loro possono beatamente non assaggiarne neanche una chele. Così mi sfogo le mie voglie di molluschi in qualcosa di meglio che gamberi enormi surgelati cotti sulla griglia. Che mica sono da disdegnare ma sempre gamberi....
Portico a Ponente (Western Portico) è un posto dove si trova un po di tutto sotto il sole. Un programma di salute che vi può aiutare sentirvi in forma, perdere peso e stare bene. Se volete sapere come...scrivetemi e vi dirò come fare in modo naturale e facile. UN SEMPLICE CAMBIAMENTO....

A LATE SUMMER - estate in ritardo
Chronologically Summer usually begins on the 21st of June which means that we should have had enough heat and humidity to be fed up with it at this point of the year - 1August. Considering that the month of June was hot as Hell and then July sort of did a really good imitation of November we're really looking forward to a LATE SUMMER...which really doesn't help me a bit because I had planned to be finished with the canning and storing by mid August and at this pace I'll just be finishing in time to pack and leave for the far-West, not to be confused with the FarWest like California but the farWest which is farther WEST than the WEST PORTICO in the boot-shaped peninsula. So here I am trying not to think about the tons of veggies I still have to can and prepare. Not worrying about the quinces which will be happily ripening whilst I'm enjoying myself in the northern part of the FARWESTUSA...and if it's ok with ya'll I'll just start thinking about what the dickens to do with the 6 lbs of dark fig jam which is sitting in the larder. It is too dark to eat with bread and butter. Too sweet to put on any 'crostate' (Italian butter cookie crust type of pie) and definitely not 'givable' for holidays or various. I'm sort of thinking of making a transformation - FIG CHUTNEY...open jars, throw in pot add the various and sundry usual for chutney and see if the magic happens. Will let you know, but obviously not now...not until AFTER the trip to the NORTHERN PART OF the FARWESTUSA. Today I'll just finish watering the garden and yak with you all.....

Begonia Tamaia - stesso titolo

I wanted to introduce you all to Tamaia the once very small begonia which has, in the last couple of years, after an incredible transplanting in a huge ceramic vase, turned into a gigantic flowering wonder. She has kept me colorful company all Spring and Summer and is continuously drooping down new bundles of dark coral colored flowers. In the middle of her drooping leaves and branches there are also two 'canes' of leaves and flowers which are stupendous. Tamaia has the tendency to shoot up some very hard bamboo-type branches which I allow to grow all Summer into the Spring when I prune them down into the midst of all the drooping branch confusion. With the hard branches I also make new plants - and my hub keeps saying not to touch the stuff in the garden around the house because I have a black thumb! Tamaia is the real name of this particular type of begonia-if you're looking to get one. They need a place in the great outdoors where temperatures don't go below, say 60°. Also you'll note that she is 'behind' a pillar of the WEST PORTICO so that she is protected not only from the sea breezes but also from direct sunlight...watering necessary once a week in the Summer - not too much, just to wet her whistle. she also loves fertilizer in the warm season - once every three weeks some azoto and other goodies for green and flowering plants. Don't ask me names cus I don't know. Hub brings me some of the stuff he puts on the olive trees and tells me quantities. Tamaia loves it though and has been outrageously blooming all over the place. How about that for a black thumb?
Per voi che avete visto il Portico a Ponente sapete che ce questa meraviglia di piante che si chiama begonia TAMAIA. Poerina ha iniziata la sua vita come una piccola pianta da apartamento con pochi fiori e ora che ha potuto godere di un rinvasamento in un vaso enorme di ceramica è partita in terzo altro che secondo ed è diventata quella che vedete qui sopra. Mi ha regalata dalla primavera boccioli e grappoli di fiori color corallo che non finiscono mai di stupirmi sia per le quantità di infiorescenze che per colore. Sembra che non vuol proprio sapere di smettere. Per la mia grande gioia ha anche fatto tre durissimi 'bamboo' proprio nel centro del mucchio di rami e foglie che stanno crescendo anche loro a dismisura e sulla quale stanno uscendo foglie a fiori a non finire. Sarà il fertilizzante dato. M mi ha portato in casa del fertilizzante per le ulivi che Tamaia sembra adorare. Comunque lei ha bisogno di riparo dalla luce diretto. Nota che è dietro un pilastro del Portico. Ha bisogno di un sorso di acqua da primavera ad estate inoltrata e oltre questo non chiede altro che di essere ammirata per la sua bellezza. Direi che gli istruzioni di M che non devo toccare le piante nel giardino intorno alla casa perche ho un pollice nero non contano sul Portico a Ponente - là sono proprio nel mio!

Sweet and Sour butter roasted veggies - burrose verdure arrostite in agro dolce

Boy is that a long title - have to figure out some way to shorten names of recipes. In any case this is all you need to make this wonderful recipe:
6 big carrots peeled and cut into long julienne
3 large purple onions cut in half and then sliced 1/2 inch wide
non stick baking pan into which you put at least 4 tablespoons of butter cut into tiny pieces(don't make those faces -butter is wonderful every-once-in-a-while)
layer the onions onto the butter and then layer the carrots on top of the onions. Bake preheated oven 350° until the veggies are crispy. Have no idea how long it will take in your modern ventilated ovens but in my gas burner it took forever....then
take the veggies out of the oven and let cool a bit. In the meanwhich they're baking:
boil to crispy 1 lb of string beans, snap beans or whatever your area calls them. Cool and then:
in a big bowl mix the warmish baked veggies with the string beans. Add a good slosh of apple vinegar or your favorite kind of vinegar. Let sit, stirring ever so often for at least 3 hours then:
put the veggie mix into a flat glass serving piece and sprinkle on top chopped walnuts. The butter sort of gets stickyish and the veggies sort of get coated with the stickish vinegary stuff and they are FABULOUS.
Una ricetta semplice:
6 carote grosse tagliate a julienne
3 grande cipolle di tropea tagliate a metà e poi tagliate a fette di 1/2 cm
in una teglia antiaderente mettete a pezzettini 4 cucchiai di burro
sopra il burro mettete in un unico strato le cipolle
sopra le cipolle mettete in un unico strato le cipolle
cuocere poi in forno 180° prescaldato per no so quanto perche nel mio forno a gas ci è voluto un eternità per farle diventare golden...forse nel ventilato meno. Togliete da forno e farle raffredare un pochino.
nel mentre cuocete al forno le verdure fate bollire affinche al dente 1/2 kg di fagiolini freschi che farete poi raffredare anche loro un pochino. Aggiungete le verdure al forno con i fagiolini ancora caldine e mescolare bene. Aggiungete a piacere aceto di mele(o il tipo che piu vi piace) mescolando bene. Far raffredare un pochino, mettere in un pirofila vetro da servizio e sopra il tutto mettete noci tagliuzzate...
a noi è piaciuto tantissimo questa insalata tiepida.

coconut macaroon pie crust - noce di cocco base crostata

You'd think that after a day of total relaxation I would be so annoyed that the first thing I would do is rush out to see a bit of civilization. Wrong, my sense of responsability told me FIRST thing 'homework then play'. So here's the recipe for the:
coconut macaroon pie crust
which is so simple that you only need:
2 cups of dried grated coconut
1 can of Nestle sweet condensed milk(we on the Boot Shaped Peninsula only have Nestle)
1 tsp. vanilla extract
mix all together in a nice big bowl.
preheat oven to 350°.
Butter (lots) a glass cake pan(note the one in the foto which is oblong)
Put coconut macaroon dough into pan pressing down with wet hand.
Put into oven and let cook till golden (note the golden in the top foto which was logically supposed to be the bottom foto but sooner or later I'll figure it out).
When golden, remove from oven, cool to 'cool' and fill it with whatever your little hearts desire. This time I put very vanilla pudding and on top a very thin layer of pinapple jello. Next time I'm considering a not so sweet banana pudding and fresh bananas dipped in lemon so they don't brown. Next time next time dark chocolate mousse with unsweetened whipped cream. It's disgustingly good....
Considerando che mi sono alzato dal letto dalla siesta con un grande senso di colpa perche non avevo ancora scritto neanche una delle ricette promesse(in ca mea si diceva prima i compiti poi vai a giocare - mi consola tanto sapendo che anche nella casa di Enzo Biagi la sua mamma diceva così) Ho deciso di mettere questa semplicissima ricetta di
NOCE DI COCCO BASE PER CROSTATA
1 lattina di latte condensato Nestle (lo so lo so che certi di voi non lo usate per motivi importanti)
250 grammi di noce di cocco essicato
1 cucchiaino di vaniglia liquida
mettete tutto in un ciotola capiente e mescolare bene.
Scaldare il forno a 180°
Imburrare bene bene un pirofilo di vetro(nota il mio ovale)
Mettere impasto cocco nel pirofilo schiacciandolo giù e alzando leggermente i bordi(usate le mani bagnati se non ti si appiccica l'impasto)
Infornare per il tempo che ci vuole che diventi golden(nota prima foto il golden in questione - poi qualcuno mi deve spiegare perche le foto non escono come io li metto)
Togliere dal forno e raffredare completamente....
Il ripieno di questa volta era crema pasticcera molto vaniglia poco zucchero con sopra gelatina di ananas(frullare ananas in scatola, nel succo far fondere una bustina di gelatina P.Angeli...raffredare complettamente e versare sopra crostata fredda)
Prossimo giro farò budino di banane non tanto dolce con banane fresche pucciate in limone che non diventano nere. Prossimo prossimo giro mousse al cioccolato fondente poco dolce con panna montata non zuccherato....
è disgustamente buono....

Lost in kitchen - persa tra le pentole
No pictures. No recipes. No no no. Just lots of ideas which sort of flew from mind to fingers and created this dinner for tonight with some friends: Recipes will come this week.
To begin:
cold grilled eggplant slices and feta-potato stuffing
Main course:
mustard garlic marinated pork ribs
sweet and sour sauteed peppers onions and celery leaves(peperonata)
Tepid butter roasted carrot and purple Tropea onion (string beans added) salad
And for dessert a surprise because our friends are bringing that part. Of course I have a lovely icey cold bowl of peach and plum fruit salad seasoned with lots of lemon juice and a bit of fructose...
And the best part is that I was even able to cook and can a whole pot of 6lbs of pear butter. Hooray! That finishes the fruit even in our orchard here at the house. The orchard which had been supplying all the fruit originally was at our other house on the other side of the hills. How bout that for a long day in the kitchen?
Oggi è stata una giornata piena di iniziative in cucina. Probabilmente perche abbiamo un paio di amici a cena stasera e loro amano mangiare. Forse perche anche M ama mangiare ma mi sono trovata piena di voglia di cucinare. Ecco i risultati con ricette scritte poi la prossima settimana:
antipasto:
Fettone melanzane grigliate con ripieno di feta, aglio e prezzemolo
Secondo(saltiamo il primo):
Costine di maiale marinate in aglio e senape saporito
Peperonata agro dolce
Insalata tiepida di carote e cipolle tropea arrostite nel burro e aglio con aggiunta di fagiolini al dente..
dessert una sorpresa perche viene portata dagli amici. Però in frigo ce un contenitore con dentro un enorme macedonia di pesche e prugne gocce d'oro con tanto succo di limone e un po di fruttosio....
E ho anche potuto cucinare e invasare 3 kg di burro di pere...guarda un po come la giornata persa tra le pentole ha reso!

just a quick cake - una torta di corsa....
No pictures of my cake. Robbed the recipe from here with some ajustments for the way I cook...which means that you can look at the picture in Ree's site then use my recipe(or hers, thanks PW for the great idea)...here's all you need to do if you use my recipe.

make two cups of fresh fruit salad cut into tiny pieces, stir in 3 tablespoons of sugar and put in juice from a big lemon - let sit in fridge for a few hours so that it makes lots of juice.
Passed that amount of time(hey, you could let it even sit overnight but then you have to take it out of the fridge and let it get to room temp, but you could if you wanted) you just:
put 1 cup of self raising flour and 1/4 cup sugar(read SUGAR folks this is a cake not JAM) into a mixing bowl. Mix a bit together and then dump in 1/2 of the fruit salad mixture including the juice. I had you make more cus that extra half portion is great to eat while you're waiting for the cake to finish baking. Mix together until it's all blended.
Now, take out a glass baking dish(cus it's pretty folks and you can see the golden sides of the pudding like cake when it's done), butter it generously and plop in the cake. Slide into a preheated 350° oven and let cook till golden - my little mommy's helper gas oven took about 40minutes but those supesonic rocket science ovens which most of you have will take about 30(I think)
Take out of the oven, cool to tepid and eat with ice cream....or you can just eat it by itself...or you can eat it with whipped cream. Note that my sugar amounts are lots less than PW's because we don't like really sweet cakes but you can even add more sugar to my recipe if it makes your day.
Seguo assiduamente un sito che si chiama(guardate sopra al link) Pioneer Woman e ogni tanto(spesso direi) lei mette delle ricette che mi fanno andare in brodo di giuggiole. Questa torta di corsa mi sembrava uno di quelle cose così facile che mi sembrava strana che nessuno aveva mai pensato di farlo(io per esempio). Ma delle volte non arrivo proprio. La sua ricetta è semplice perche usa frutta sciroppata in lattina. Io che ho tanta frutta nostrana ho deciso di variare...anche lo zucchero nella mia ricetta è molto meno perche a noi piace meno dolce.
Fate almeno 2 tazze abbondante di macedonia con 3 cucchiai di zucchero e succo di 1 limone. Lasciare riposare in frigo almeno 4 ore o tutta la notte se volete. Però ricordate che una notte in frigo vuol dire un bel po di tempo sul bancone prima di infilarla nella torta perche deve essere temperatura ambiente. Pronta la macedonia prendete una ciotola capiente e metterne dentro 1 tazza di farina autolievitante(io uso Spadone) + 1/4 tazza di zucchero semolato(qui siamo nelle torte e uso proprio ZUCCHERO non il fruttosio come nel mio JAM). Mescolare un po insieme gli ingredienti secchi poi versare sopra metà della macedonia e metà del suo succo. Mescolare insieme questa combinazione e versare il tutto in una pirofila di vetro(trasparente così che potete vedere il golden dei fianchi della torta quando cotta) che avete precedentemente imburrata abbondantemente. Infilare in forno 180° per quello che ci vuole per i vostri forni moderni. Il mio forno a gas ha messo 40 minuti ma i vostri moderni chissà. Tiratela fuori, quando è tiepida potete mangiarla con gelato alla cream, panna montata o proprio così com'è. Semplice semplice...
PS: la macedonia in più era da mangiare mentre aspettavate che la torta cuocesse...tanto per gradire.

Jam Session - Confetture a gogogogo....

GOLDEN PEAR PINAPPLE WHITE PLUM JAM
This pot is full of golden pear pinapple white plum jam waiting to be put into jars and stored on the larder shelves. The swan song of the Jam Session for July. And if you believe that I have a wonderful bridge in Brooklyn - I just love throwing in phrases from my youth. In any case the recipe is so simple it is ridiculous:
1 sad, overripe pinapple peeled, core removed and cut into tiny pieces. Be sure to keep the juice which flows out. I usually use a cutting board for roasts which has those lovely little canals into which the juice flows. Dump it into the jam pot.
5 lbs of ripe summer pears washed, cored and cut into tiny pieces . Don't peel us!!! Dump 'em into the pot.
8 large ripe white plums - no other color will do....absolutely not. washed and cut into tiny pieces. Dump'em into the pot.
juice of 1 lemon dump it into the pot.....
2.5 cups of fructose dump it on top of everything in the pot.....and you guessed it, wait for the magic juice to form. Once the juice has formed all you gots to do it cook it an hour at a time, cool it completely, check the jellying point. ATTENTION folks pinapple has a quick jellying point so you might just find yourself Jammed after the first 1.5 hours. Be prepared! Usual hot jam in hot jars, cap and wrap(gee, after three recipes I finally found the rhyme which fits). Day after your jars of golden jam are ready....PS: this one is my favorite so I always have a teeny tiny jar just for me to eat the day afterwards. PSPS: and if you're smart you'll be careful not to sample the jam too many times....it tends to disappear quickly. ENJOY!
GOLDEN PERA ANANAS GOCCE D'ORO CONFETTURA
ricetta semplice semplice:
1 ananas tanto maturo che sembra triste - sbucciare e tagliare a dadini piccini. Buttare nella pentola per la confettura.
3 kg di pere estive mature - lavate, tolte semi e company, tagliate a dadini piccini. Buttare nella pentola per la confettura.(non ci sbucciare neh?)
8 prugne goccia D'ORO - o per chi ama nomi antichi 'buqui da preve' - lavare, togliere nocciolo e tagliare a dadini piccini. Buttare nella pentola per confettura.
Succo di 1 limone - buttare nella pentola confettura
600 grammi di FRUTTOSIO - versare sopra tutto nella pentola confettura...e logicamente aspettate il magico succo che forma. Una volta formato il succo iniziate la cottura seguendo il solito 1 ora di cottura, raffreddamento completo e se necessario ricottura. Guardate sempre punto di gelificazione. ATTENZIONE ser ananas gelifica meglio delle mele e potresti trovare la confettura pronta dopo 1.5 ore...pronti via al invasamento - confettura bollente in vasi bollenti. Non dimenticare il riposo al caldo dentro asciugamano da spiaggia o coperta! PS: questa confettura è la mia preferita e tengo sempre un minuscolo vaso pronto per i miei meritati assaggi a colazione del giorno dopo lavoro. PSPS: attenzione a non fare tanti assaggi durante cottura - sparisce presto anche a caldo.AHAHAHAH!
