COTTON CANDY SKIES CIELO DI ZUCCHERO FILATO

this morning everything was rosey...everything was tinted pink...everything was cotton candy sky colored...it was incredible and I didn't change a thing....how bout that from the Western Portico?


questa mattina tutto era rosato...tutto era tinto di rosa ... tutto era cielo di color zucchero filato...era incredibile e non ho cambiato un iotta di nulla ... a però dal portico a ponente!

HIDDEN TROPICS CUPCAKES - TROPICI NASCOSTI CUPCAKES

Someone has to absolutely explain to me why golden cake dough NEVER burns in my mommy's helper gas stove whilst chocolate cake dough usually does ... and it's not the temperature because they're at 350° with a thermometer in the stove! So here they are. My golden hidden tropics cupcakes:

weigh two eggs and break into a large bowl...then add same weight of the following...
sugar
flour 0
yoghurt
oil (I used corn)
1 teaspoon of baking powder
beat well then add 1/2 cup dessicated coconut (do you like dessicated? does the word exist or did I just make it up?) for those of you who don't know the word, have never seen it cus it doesn't exist or other such things DRY GRATED COCONUT...
beat all well then put all of the mixture into a large pitcher and pour into your already in the muffin tin cupcake cups...half full.I manged to get 11 but if you measure better you can squeek out the 12th(se escono solo 11 cupcakes non dimenticate di mettere un po di acqua nel bucco vuoto se no si brucerà la teglia)....on top of each raw cupcake (NOTE the picture on the top) put a tiny plop of GOLDEN Pinapple Butter....bake at 350° till golden...take out, place on rack and cool...making sure that the cupcake monsters and the beaglcuda remain at arm's and mouth's length from them....


Qualcuno mi dovrebbe proprio spiegare perche le mie torte con impasto golden non si bruciano mai mentre quelli al impasto al cioccolato sono sempre nerissimi quando escono dal mio forno a gas aiutante mammina. Mica che la temperatura sia diversa...sempre 180° con termometro nel forno e occhio sui numerini sopra. Comunque questi nelle foto sono i cupcakes tropici nascosti...e funziona così

pesate 2 uova e rompetele in una ciotola capiente...nella quale poi metterete uguali dosi di
zucchero semolato
farina 0
olio di mais
yoghurt intero
1 bustina di lievito per torte(senza vaniglia se possibile)
sbattete bene il tutto e poi aggiungete 1/2 tazza di cocco disidratatto...o essicato...o disseccato...o come lo volete chiamare...mettete tutto impasto in una brocca capiente e versate impasto dentro le formine di carta per cupcakes che sono dentro la teglia di cupcakes da 12...(questo lavoro ovviamente va fatto prima di iniziare lo sbattimento impasto)...se misurate come ho fatto io, un po di piu un po di meno, avrete solo 11 cupcakes...se siete un po più precisi potete decisamente farne uscire 12...se escono 11 mettete un po di acqua nel bucco vuoto così non brucia la teglia....sopra ogni cupcake crudo(come nella foto sopra quelle cotte) mettete una cucchiata piccola di BURR/ORO ANANAS....così diventa tropici nascosti...infornate forno caldo a 180°, appunto, affinche golden...levate dalla teglia le cupcakes e raffredare...poi si mangiano così come sono....

IT'S JUST A FRITTATA - E' SOLO UNA FRITTATA

It's just a zucchini frittata  which means several eggs, zucchini and onion sliced really thin sauteed till golden and then put into the eggs...of course you add a good handful of grated parmigiano and some salt and pepper. Line the tin with parchment, oil the parchment with olive oil and then whilst spreading the frittata flat on top you remember that you have some extra pie dough - so you lattice-work the top with strips. Ok so it's not a professional lattice-work with the strips - this is not a food blog folks!

E' soltanto una frittata di trombette che vuol dire parecchie uova, trombette e cipolle tropea tagliate fine e soffritte affinche golden e poi messi dentro le uova...e certamente aggiungete una bella manciata di parmigiano gratao e un po di sale pepe appena macinato. Foderare la teglia con carta forno che poi ungi con olio di oliva(vecchia ovviamente) e mentre spalmavo piatto la frittata mi ricordai un pezzo di impasto per torta verde che poi tagliai a strisce e che poggiai sulla parte sopra dicendo ... rassomiglia ad un canestro...vabbè  non è un lavoro da professionisti quel lavoro a mo di canestro ... dopotutto questo non è mica un food blog....

SNEAK PREVIEW THANKSGIVING IDEAS DI SOPPIATO IDEE PER RINGRAZIAMENTO

right, so it's over a month away...right! Only this year I am really thinking about having a totally vegetarian meal...long live turkies!

OK, so che ho ancora un mese per pianificare...giusto! Solo che quest'anno sto pensando veramente un pasto totalmente vegetariano...lunga vita al tacchino!

SNEAKIN IN A NEW POST olives - DI SOPPIATO UN POST NUOVO olive

Those hands could be mine except for two little differences:
1 - I don't wear rubber gloves...I wear fingerless woolies
2 - Hub has just started putting up the netting - which means hanging them over wires strung between poles and connecting them with a special sewing machine
so I'm preparing myself spiritually - work will begin SOON...for me anyhow...I am the official leaf remover!


Quelli mani potevano essere i miei eccetto due differenze minuscole:
1 - non metto guanti chirurgici...metto quelli di lanuccia senza dita
2 - Marito ha appena iniziato mettere le reti - tradotto - le sta appendendo sui fili, le sta cucendo con la macchina per reti e così io mi sto preparando spiritualmente - il lavoro inizierà PRESTO ... per me almeno .... io sono quella che fa lavori di concetto ... tolgo le foglie!

PINAPPLE BUTTER BURR/ORO DI ANANAS

Golden pinapple butter. Jar recycled from original pinapple jam from Turin. Recipe so simple that it is ridiculous. But the taste is superb, the consistency spreadable and honestly, I don't think that it is going to last very long...

Pinapple Butter
1 ripe pinapple peeled, cut out hard center, cut into tiny pieces and put into a heavy-bottomed pot
Pinapple juice - just enough to cover the fruit so that you can boil it until tender then with an immersion blender make it smooth.
100grams fructose because I prefer it to sugar but you can use whatever sweetener and whatever quantity you desire - I like mine not to sweet....you add the sweetening agent to the fruit AFTER it has been blended and continue cooking slowly slowly until it becomes butter - that's it folks..
I recomend a little cup of it reserved for after all that work... I ate mine by the spoonfulls during the afternoon! Since I only make 1 pinapple at a time - just fridge it and you have butter for as long as it lasts...

Burr/oro di ananas. Vaso riclicato da un regalo di confettura ananas arrivato da Torino. Ricetta tanto facile che è ridicolo. Però è superba e la cosistenza è spalmabile e onestamente non credo durerà molto questo enorme vaso...

Burr/oro di Ananas
1 ananas molto maturo sbucciato, tolto il pezzo duro nel centro, tagliato a pezzettini e messo in pentola con fondo pesante
succo di ananas- solo abbastanza a coprire la frutta che la potete bollire affinche tenera che poi con mini pimer ad immersione la fate diventare purea
100 grammi fruttosio (lo sapete già che uso solo questo per le mie confetture) ma potete usare qualsiasi dolcificante che preferite - moscovado, semolato eccecc...aggiungete questo DOPO che avete fatto la purea di ananas...e poi cucinate cucinate dolcemente affinche rassomiglia ad un burro morbido - c'est finis.
Raccomando vivemente una ciotolina come premio dei vostri lavori vicino al calore del gas...la mia ciotola l'ho mangiato durante il pomeriggio. Facendo poi 1 ananas ogni volta - dovete solo mettere il burro in un vaso abbastanza capiente (leggete - un ananas fa SOLTANTO la quantità che vedete nella foto) e mettetelo in frigo! Dura - mai - finche non lo mangiate - che nel mio caso POCO

The Pickle Story - Racconti di Sott'aceti


When I was little my Nahmoe(maternal grandmother's nickname) used to make FRIDGE pickles...simple recipe which was always delish. For some reason history sort of catches up with you. I've been desiring fridge pickles all summer and it seems that the desire is going into Fall and guess that as long as I can find stuff to pickle I will be doing so into Winter. It's so simple to FRIDGE pickle..in fact it is so simple that I'm not pickling and storing anymore...it works like this...you get, for example in this foto, a cooked beet which you cut into lots of thinnish slices. Then you get a couple of onions (sweet ones if possibile) and cut them into lots of slices as if you were going to make friend onion rings...each veggie in its own bowl please because you have to make 4 layers....first layer always onions then veggie then onions then veggie (always finishe with the veggies)...the secret is to then boil 1 cup of cider or other delicate vinegar with fructose or moscovado sugar...and here you decide which vinegar to use and how much...once the veggies are in the jar and the vinegar mixture is cold you're ready to construct the seasonings...whatever you want. If you use for example whole spices you must put them into the hot vinegar and then wait till it chills. when cold I recommend that you take out the spices since the vinegar will have already gotten the flavour from them.  If you use for example just seasoned salt or garlic or the likes just put on the top and pour in the chilled vinegar...of course you can't eat them right away...the big secret is to put them into the bottom of the fridge and WAIT at least 24 hours. Then the miracle happens and you have FRIDGE pickles...next try will be FRIDGE chutney...but that will be another story....
 
ci sono delle volte che credo la nostra storia personale ci rincorre man mano che diventiamo più 'maturi'. La storia in questione a questo punto sono i sott'aceti che faceva mia Nahmoe(nomignolo di mia nonna materna). Certo che quando ti vengono le voglie di sott'aceti non hai sempre vasi e vasi di roba messa via per inverno. Una volta avevo tantissimi vasi di tutto di più ma man mano che 'maturo' mi rendo conto che i gusti cambiano e anche le voglie. Tipo la voglia di stare in cucina a 38° nel pieno dell'estate davanti a fornelli mentre fai di tutto di più. Così chissà perche la mia storia culinaria ha preso mano e mi ha fatto ricordare questi sott'aceti tanto piaciuti che faceva la Nahmoe...diciamo che sono facilissimi perche li puoi fare tutto l'anno con tutto quello che trovi di sott'acet-abili(bella quella parole appena inventata)...la foto dei sott'aceti di oggi sono di barbabietola bollita e cipolla di tropea. Prendi la barbabietola cotta e tagliarla a fettine di 1 cm e mettere in una ciotola. Poi fai lo stesso con cipolle di tropea (qui 2 medi). Poi ho preso 1 tazza di aceto di vino bianco(puoi scegliere quale aceto usare perche la fantasia aiuta molto in queste ricette) nella quale ho messo poi fruttosio(e qui puoi scegliere quale dolcificante da usare -miele, moscovado, zucchero semolato, agave - e scegliete anche le quantità) Le quantità ovviamente variano con la verdura che metti e il vostro palato. Aceto va bollito con dolcificante che si scioglie bene poi va raffredato completamente. Verdure messi nel vaso ovviamente. Una nota per le spezie - se usate pezzi di spezie dure tipo cannella o chiodi garafano questi vanno messi nel aceto ancora molto caldo ... poi tolti quando aceto è freddo prima di versarlo sulla verdura nel vaso...un po di confusione nelle mie ricette ce sempre...dopo aver messo le verdure nel vaso, aver scelto si o no spezie basta che mettete sale o quant'altro condimento volete, versate sopra l'aceto freddo e il tutto va poi posto in fondo al frigo per fare la sua magia - infatti questi in inglese si chiama FRIDGE pickles ossia sott'aceto fatti in FRIGO - vi garantisco che sono buoni e avrete sempre sott'aceti tutto l'anno senza dover stare davanti al gas in estate. Prossima prova di FRIDGE  pickles saà CHUTNEY ma questa sarà un altra storia...
